Elaine’s Mulligatawny Soup

PREPARATION TIME: 20 MINUTES * RESPONSE TIME: 1 HOUR * TIME: 8 to 10 SERVINGS

2 cups dried red lentils 2 Granny Smith apples, peeled, cored and chopped
12 cups of vegetable broth 1⁄4 teaspoon ground cinnamon
4 cups of water 1⁄4 teaspoon ground cloves
1 large onion, chopped 2 teaspoons of ground coriander
4 large cloves of garlic, minced 1 teaspoon ground turmeric
1 tablespoon grated fresh ginger 1 teaspoon of curry powder
2 medium carrots, chopped 1 tablespoon of salt
2 celery stalks, thinly sliced 1⁄2 cup coriander

Wash the lentils well under clean water and squeeze out the excess liquid. Add vegetable broth and water to a large pot and bring to a boil. Add the lentils and cook for 5 minutes, then add the onion, garlic, ginger, carrot, celery, apple, cinnamon, cloves, coriander, turmeric, curry powder and salt. Bring to a boil again and then lower the heat. Cook on low heat for about 45 minutes. The liquid in the pot should be reduced by about a quarter. Adjust seasonings to taste. Serve hot, garnished with cilantro.
