Elaine’s Mulligatawny Soup
PREPARATION TIME: 20 MINUTES * RESPONSE TIME: 1 HOUR * TIME: 8 to 10 SERVINGS
2 cups dried red lentils | 2 Granny Smith apples, peeled, cored and chopped |
12 cups of vegetable broth | 1⁄4 teaspoon ground cinnamon |
4 cups of water | 1⁄4 teaspoon ground cloves |
1 large onion, chopped | 2 teaspoons of ground coriander |
4 large cloves of garlic, minced | 1 teaspoon ground turmeric |
1 tablespoon grated fresh ginger | 1 teaspoon of curry powder |
2 medium carrots, chopped | 1 tablespoon of salt |
2 celery stalks, thinly sliced | 1⁄2 cup coriander |
Wash the lentils well under clean water and squeeze out the excess liquid. Add vegetable broth and water to a large pot and bring to a boil. Add the lentils and cook for 5 minutes, then add the onion, garlic, ginger, carrot, celery, apple, cinnamon, cloves, coriander, turmeric, curry powder and salt. Bring to a boil again and then lower the heat. Cook on low heat for about 45 minutes. The liquid in the pot should be reduced by about a quarter. Adjust seasonings to taste. Serve hot, garnished with cilantro.
George Pastrami’s bedroom
PREP TIME: 5 MINUTES * PROCESSING TIME: 5 MINUTES * YIELD: 4 sandwiches
1⁄2 cup water or beef broth |
3 pounds thinly sliced pastrami |
1⁄4 cup hot brown mustard, divided |
8 pieces of rye bread |
In a large pot, heat the water or broth over medium-low heat, then add the pastrami. Cover and simmer for about 5 minutes, stirring occasionally, until heated through. Remove from heat and cover. Divide the mustard and spread it on 8 slices of bread. with the help of tongs, remove the pastrami from the pan, allowing the excess liquid to drip, then divide evenly among 4 pieces of bread. Top with the remaining 4 slices of bread. Cut each sandwich in half and serve.
